I already own a Deepcool Captain 240EX and thinking of buying a AM4 bracket for it. Also, do you think 2x16GB is ok or should I buy 4*8?
Is my zen 3 ok or should I consider an Intel option?

Get the 2 x 16 Gb more flexibility.

yeah i would go 2 x 16 Gb and probably go 850w PSU even though 750w will be fine i like to have that bit extra with 3000 series power spikes

For future upgrades i would go for the 2 x 16Gb sticks as extra ram is nice to have.

I'd definetly be looking at Intel as with the 12600k / KF you spend a similar amount and get similar performance but end up with a much better motherboard and better future proofing.
