I know some of the £1000+ Trek bicycles i was looking at about 18 months ago came with no pedals

Most high end bike don't come with pedals as they are very user specific and most people have their own preference / style they want.

Nope! I disposed of the kinfe in one of the yard skips, but I don't think many others would have been so thoughtful.
