Little European Trip

The problem with Amsterdam is neither of us really want to go and it leaves my drive hom at 6hrs10mins, with a 1hr45min Ferry trip (+wait) so to get back for mid afternoon we'll end up leaving at about 8am, which then only gives us the previous evening in the actual city.
 
Well all is going well except today is a public holiday in Koln apparently so the car park we've parked in is locked up. Absolutely fuming as the hotel told us to park there.

Now having to wait hours and pay an emergency call out fee on to of the €16 per day parking charge.

i've a mate who lives in NL (hilegom) who i'm going to see in July for a few days (4 maybe 5 days) i'll fly into Schipol.

we want to go somewhere and spend one night, so was thinking either Bruges or Cologne. where is best out of those two?
doubt we would get both in

was thinking of just getting the train as it's only a few days we have or would car rental be the way to go. what are prices like for a car
