Looking for two Italian recipes.

I'm, trying to find a recipe for two Italian dishes, I only have the Italian names for them from a restaurant menu, so might be called something else, so I'll include a description. If anyone knows what they are or has a recipe for them or something similar it would be much appreciated.

PANZEROTTI ALLA VALENTINO
A pasty parcel filled with tomato, mozzarella, minced beef & onions then deep-fried

TORTINI DI PATATE ALLA PAESANA
Potato cakes topped with mozzarella & tomato

thanks :), tha'ts all i need for that one, it could well be that menu I got it off, I just did a search for restaurants, it's the easiest way to make a menu. and try new and different things. i should be able to make a good filling.

That recipe for panzerotte is authentic - it is a pugliese dish.

The Valentino version is more of an northern variation - simply add some fried mince to the stuffing.

As the recipe states, you need to use 00 flour - ordinary homepride won't do!
 
what's 00 flour when it's at home?

I'm a very good cook, but bread and pastry is something I've only taken up doing recently.
 
00 flour is a "hard" flour suitable for bread, pasta, pizza etc. It has a higher proportion of gluten which means that you can make a nice elastic dough.

Trust me, it will just not work with ordinary plain flour.
