Mince beef - question about use by date

I had some mince beef that was 'use by' the 8th.

It was nice and red still, so I cooked it on the 9th and made a chilli.

There was leftovers from that, which went straight in the fridge that I want to eat tonight (11th) which is 2 days after I cooked it and 3 days past the use by date.

I guess the question is, does the cooking process extend the use by date further?

but raises an interesting point about meat redness ... now that they use nitrogen in packaging to stop oxydation (of haemoglobin ?)
is the colour misleading, yes, always need to smell stuff too, but can/are your eyes now potentially deceived.

Well it tasted fine.

I'll let you know if I am alive tomorrow.

We also had guacamole that should have been used within 24 hours, after opening (it was more like 48 hours)

I made Spag bowl last night, but after frying the mince beef I realised I'd run out of the bolognese sauce I normally buy. I happened to have a tin of plum tomatoes so poured that into a saucepan, added a squeeze of tomato puree, a little olive oil, a bit of cornflour, salt and pepper. It was nice, almost as good.
