Jag and Lexus V8s are nice but fun? Not too sure about that. If you want a step up in terms of marquee and luxury inside - then those are good options.
VXR8 are very fun. Basic to service and the interior will still be a step up from the Nissans you've owned.

...the Z06 can lap the Nürburgring in less than 8 minutes – beating the BMW M3 CSL, the Ferrari F430, Honda NSX-R, Porsche 911 Turbo and more. Without doubt it is an extremely competent, capable car.
No way, my money would be on a '67-'73, Fastback or Convertible.

Not that Nürburgring times are indictive of a car that's great to drive but they can serve as some kind of vague guide.
Hell, in the States Corvettes have dominated Autocross and Gymkhana events since the Seventies.
Regarding the build quality, certainly not as good as some of its similarly-performing rivals - but then those rivals usually cost tens of thousands more, hence the higher quality materials and finish. The Corvette has money spent where it was needed to get the performance and reliability. I've always found them very comfortable though and, barring the seats and some minor trim (although it does vary), very durable inside.
Obviously a lot of it is subjective but I've been in much more expensive cars with worse interiors, or interiors that aren't as comfortable or as refined![]()
Plus it's fairly common to see corvettes on 200k miles+ in the states
