Moving to hosted exchange/office 365, how?

Many many years ago back when I worked in infrastructure support I setup a server for my folks little business, SBS2003 with exchange installed picking up emails from their website provider via pop3.

Time has come to finally replace the server and am wanting to move them over to a hosted exchange solution.

Now I'm no longer working doing this sort of thing and have no idea on how best to go about this.

The server will likely be running Server 2012 but ive seen something about 2012 Essentials having some ready made integration stuff available for Office365.

My main thought is how to integrate connecting to whichever hosted solution with minimal fuss for the end users, and also when there's no on site IT support to speak of.

Is essentials going to be a better way to go to do this, or can it be done easily enough in regular server 2012?

Any hints, tips or guides on setting this sort of thing up anyone can recommend?

Only a small family business with a couple of staff so trying to keep things simple as I can.
 
Thanks, should have said it's going to be new domain etc no migration as such they'll just come in one day and login as normal and not know the difference, in theory anyway.

They only use email and file shares, and only a handful of client machines, very simple setup.
