To cut a long story short we had a BBQ arranged ages ago but it wasn’t possible due to the weather last night. We still had our friends round so I did an indoor buffet. The ribs were so popular I ended up having to cook more so I thought I would share my recipe.

This was a large rack of ribs cut into individual portions.

I braised the ribs for about 30 minutes in a stockpot with chicken stock and onion.

I then brushed them with a coating made from the following:

2 garlic cloves crushed
4 tablespoons of tomato ketchup
2 tablespoons of Oyster sauce
2 tablespoons of sugar
And a couple of teaspoons of chopped coriander.
A large pinch of salt and freshly ground pepper.

I grilled them off on kitchen foil for about 10 minutes turning occasionally and basting them.

My friends asked for the recipe so I have had to write it down. These will work brilliantly on the barby so I thought I would also share them with you.
