Firstly, you need to decide if you're going to build yourself or get OCuk to do it. If yourself, and you like OCuk, you can buy bulk here, but if they're sold out here, nothing stopping you buying elsewhere..B660 Tomahawk case in point which you can get elsewhere for £189 for delivery tomorrow if you, or after just checking you can get the MSI Pro Z690-A DDR4 wifi for £195 elsewhere (as said £220 a bit steep here as been consistently £200 for last few months)
Case..out of those 2, I'd go phanteks and corsair. The corsair psu has a 10 year warranty, the msi has a 5 year one and I prefer the phanteks case too

the max power draw the 12700k had was 374W under a stress test and the gtx 1660 storm(which you may get later you were saying is 132w stressed) so combined you're still under 500w, and you wont actually be drawing that...seeing as you're going to try the igpu firstly, and then maybe put in a basic card the 850w corsair is already overkill..you don't need 1000w, nor 850 for your workload.
if you want to spend less on case, the phanteks p400a below is on offer, or the lian li cool mesh with corsair rm650 on offer also..the rm650 is more than capable for your workload
you can then put the saving into a better ssd
why do you need/want more fans? the cases all comes with 3 in front and you get some with the aio also...if you get the p500a case remember get the 360mm aio, all other cases, and the 2 i put above is the 240mm

Only putting this out there, but seeing as a 12700k is £389 and 12600k £259, from above, 12700k is 6% faster for lightroom, and 4% faster for Photoshop..is it worth the 50% premium you'll be paying...the 12600k is still on a par with a 5900X, so is still extremely powerful and going to be a massive improvement on your current system
