The ideal would be a G-Sync - these appear to be the only ones n your budget 27" @ 1440p:

I would read reviews and release dates of of each monitor - and whether adjustable height is crucial for you (It is for me - both have it).

I’d like a 27in G-Sync 1440 monitor now. ;):D
It would compliment a GTX 1080 nicely - but the premium is hefty.

You can still use a Freesync monitor and make use of the high refresh rates to save money - but obviously not the Freesync facility.

Sorry, another question.....

I'm going for a 1080 graphics card now, and there seems a number of choices....which one should i go for, or does it matter that much?

The Aorus is the superior card - Gigabytes top tier card. The clocks are slightly higher (but irrelevant) but the cooling is excellent and quiet (giving option of greater clocks). Suggest you look at reviews. Plus, decent after care and UK RMA.

But The £499 card would do the job just as well if you want to save £40 - but i would pick the Aorus over the G1 over £10 difference.

5 Days till payday and i'm still debating whether i get a 4k monitor than runs at 60hz or a 1440 monitor that runs at 144hz

This one:
Acer Predator XB281HK 4K Ultra HD G-Sync V2 1ms Gaming Monitor
or

First one is £399

1440p and high refresh rate every time... Or ultra wide 1440p which is more pixels then your standard 1440p and less then 4k but able to be driven over 60hz !!!

Aorus cards are great if you do vr- internal HDMI port
