nice restaurant in or around edinburgh

I've been to the Witchery and the Tower and can say they are very good but they are relatively expensive. There is also good restauraunts to eat in Leith at the Shore namely Martin Wishart and the Kitchen, both are 1 star places.
 
Haven't eaten in Edinburgh much yet - but there is a nice restaurant nearby in Stirling called the Hollybank. Though it is nowhere near the quailty of some of the suggestions so far
