Pheasant recipes!

I'm lucky enough to get invited on a few massive Pheasant shoots every year and its that time of year now so I have a garage full of birds. I love them but always just end up roasting them or chucking them into a curry. While delicious i think its time to try somethign different. Ive seen some really cool posts on here with interesting recipes so OCUK chefs unite and spec me a Pheasant dish!
