P6T7 because we've built an identical server before with this board and it is nice and stable with 24gigs. Didn't want to take a risk with some other board. It also has a SAS controller that may come in handy at a later date.

It will be a VM host running Hyper-V.

The AMD mobo came with the chassis. It is a dual socket Opteron board made by Tyan. Very expensive in their day. We've no use for it, so will be sticking it on the bay.
