Reformating and reinstalling OS X on an old iMac

My Dad has an old iMac which he no longer uses. He'd like to give it to another family member for them to use but wants to reformat it so that none of his data remains.

I'm somewhat confused about how to do this on Apple hardware. The machine must be at the very least 6 or 7 years old, and it isn't running the latest version of macOS yet (but the update is available).

All I need to do is make a USB bootable drive with the latest version of macOS and then reformat and reinstall, but I'm not sure how to do this in the Apple world. Unfortunately, we don't have any of the discs that came with the machine either.

If anyone could offer some advice on this front, I'd be grateful.
