How about the NE of Scotland - follow the Castle Trail? Add on Slains Castle (inspiration for Bram Stoker when he wrote Dracula), and Dunottar Castle for some cliff-top awesomeness.
One of the best places I have ever been in Scotland is The mountain ranges just North of Glasgow. Can never remind the name of it.

The Wallace Monument was one of my first thoughts also, Edinburgh Castle may be a complete stramash of a building but it's certainly an impressive sight when it's all lit up at night.
One that I don't see mentioned and should even if it's purely as an engineering achievement is the Falkirk Wheel.

I don't know if you could make a day of it there but you could also take a wander along either the Union Canal or the Forth & Clyde Canals as it joins both together, on a nice day it's a lovely little walk along them now they've cleaned it up. As a piece of engineering it's utterly superb, the visitor centre gives you a great view of it and if you're so inclined you can go on one of the boats that goes up and down the wheel on a rotation. It's something that can carry in the order of hundreds of tonnes yet uses about the same amount of power to rotate itself as you would use for 4-5 kettles of water being boiled and loses about the equivalent of a cup of water every day from use - the more I think about it the more I'm in awe of it.
Does it have to be? I thought it just had to be similar to Stirling Castle or at least as impressive and I reckon the Wheel qualifies. Anyway Falkirk should be within an hours drive from either Stirling or East Kilbride - two if you're dawdling.

Just meant, its close to Stirling and Calender which are both nice parts to visit. Could possibly be done within the same day, Stirling Castle is very nice when all light up.
