Searching for a simple recipe

Hey,

My girlfriend is coming to visit next week and we usually just end up going on a night out for a meal but I wanted to cook for her this time. I'm not a very good cook and only really know how to cook basic things like Spag Bol and that's a bit boring.

Does anyone have any suggestions for a meat/fish dish that's relatively simple to cook and doesn't take too long to make? Nothing spicy please!

Starter :king prawns in sweet chili sauce and then fry or grill until tender with a dip of humous

Main : 1 portion of salmon grilled, with roast veg's

Desert :custard and bread and butter pudding.

I can't cook much either so basic things I try are lemon chicken with rice or some kind of pasta bake.

Just a case of buying off the shelf sauce and frying for the lemon or chicken or putting in the oven for 20 minutes or so and you can pretty much add what you like to a pasta bake, tune or bacon or chicken or Italian sausage.
 
Steak is easy, as is poultry (duck breat in cherry/ soy-sauce and fry for several minutes each side then into the oven for 10 minutes)

King prawns as above is a good idea, Finger food = fun

starter: baby mushroom in a pan with small amount of oil until tender, add chicken stock (dilated in water) and single or double cream, simmer for 4 5 min and serve with hint of garlic bread sticks or bread.

Main: Beef stake (grilled) roast veg (sweet pepper, onions, carrots, asparagus) and mashed sweet potato.

Desert: zesty lemon cheese cake (from super market)

Starter: Humous with dry break or bread sticks and olives

Main: Roast chicken rubbed in olive oil, small amount of garlic, salt pepper, small amount of saffron and red chilli, serve with chips or spicy rice and coleslaw.

Side dish: if the chicken becomes to spicy as a side dish have creamy Greek yogurt with fresh small chopped mint leaves and a small amount of suger.

Or

Greek yogurt, grate 1 whole cucumber, add dry or fresh mint with a hint of fresh garlic only if you want, mix the whole thing and serve cold. Too much garlic will kill it. You can also add small amount of salt.

Might do the beef steak with mashed potato and veg suggestion or Teriyaki chicken.

I use off the shelf sauces on a daily basis so I wanted to give some real cooking a shot, making the stuff myself.

Slow cooked lamb with cranberry sauce?

A small joint of lamb (rolled probably best), stick a couple of pints of water, a stock cube or two and some onion, herbs and occasional bit of garlic then stick it in the oven for a few hours. For the last hour or so add some chopped veg (carrots, parsnips, caugettes) and potatoes. Cranberry sauce consists of putting the cranberries in a pan, a bit of sugar and water and leave to stew for a little bit. The only difficulty is finding the cranberries!

Remember that what really makes a meal seem good as well is presentation. Don't just dollop it on a plate, organise it nicely and make it look good, then even if it's not to her tastes at least she'll think you spent a long time over it. :p
 
It has to be cheese cake for dessert. They are the easiest thing ever. and surpass shop bought ones by a mile.

you will want

200g biscuits (what ever you fancy really)
50g melted butter

300g white chocolate
200g mascarpone;
200g full-fat soft cream cheese;
200g double cream
250g strawberries

250g strawberies
50g sugar

1) Brake the biscuits up and mix with eh melted butter. Then place in a cake mould with a releasable side and press down and place in teh fridge to set.

2) Next take the chocolate brake up and place in a glass bowel. Place the glass bowel over some little simmering water making sure the water does not ouch the bowel. Melt the chocolate and set aside for 10minutes or so till cool but still liquid.

3) Next take the cream and whisk till soft peaks, then mix in the cream cheese and mascapone. Once chocolate has cooled beat that in as well.

4) Take half this mixture and spread over he base. Then take 250g of strawberries and slice longways so you get heart shaped slices. Layer these neatly on the cheese cake working from the outside in, in circles. Once you have covered the cheesecake in a single layer, place the rest of he mixture on top, place in fridge to set.

5) Meanwhile take the other 250g strawberries and roughly chop and place in a pan with he sugar and a tablespoon of water. Lightly heat until the strawberries have broken down and the liquid turns syrupy.

6) Once cooled pour over the top of the cheesecake and allow to set in the fridge.
 
Dessert wise, chocolate moose is pretty easy to make, and always makes an impression (unless they are weird and don't like chocolate!) It can be a little tricky to get it to set properly occasionally. Or you can cheat and buy a couple of Gu's, then pretend you made them yourself... :p

Good site, full of recipes and you can search to your heart's content for easy or hard food to cook. :)

This site is ace. I decided not long ago to start putting a bit more effort in to cooking and I looked at BBC Good Food first. There are loads of easy recipes on there. To be honest, as long as you can simply chop veg and fry meat, you are sorted for loads of recipes.
 
Hamburgers made with a good quality beef burger, slab of good cheese, ketchup and salad thrown in a nice fresh ciabatta roll? Served with big fat potato wedges.
