Which would be the best option, sell my 4890 for 5xxxx? or buy another and crossfire it. if selling it would be better which card would give me a noticable gain in games.

Well, like me then - you like high settings. :D If Dx11 takes your fancy and is on your agenda then sell it and grab a 5*** card(s). If not then by xfiring two 4980's you'll get excellent performance. Iirc they would out perform a 295gtx.

It's difficult sometimes, I buy an interim card which in almost all respects satisfies me more than my X2 and then I find I need the horse power of it for a game or two, can't win. :(:D I'll have to start buying one of each! :D

You'll get a higher fps buying a second 4890, as yes they do run on par with/arguably slightly faster than a 295.

You will get dx11 and a cooler, more power efficient solution going for a 58xx card, but I wouldn't recommend going for the 57xx series if you want max fps, as the 5770 is slower than a single 4890.

A second 4890 would be on average £140ish manufacture depending, minimum for a 58xx is about £210 for a 5850 (about 20% boost over a single 4890) or £300+ for a 5870 (40-50% over single 4890).

The end of the day it's a case of money and speed or future proofing tech wise.
