I bought a packet of ten rashers on June 25th which was the use by date, took a few rashers to cook and immediately froze the rest. Any idea how long frozen bacon can stay in the freezer and must they be defrosted in the fridge overnight rather than quick microwave defrosting?

I'd have no issues eating that.

Also when it comes to cooking it just defrost it in the microwave/hot water, I mean it'll be fine either way but I'd cook it as fast as possible after thawing. It's not like it won't be cooked through, and if you manage to somehow not cook a rasher of bacon through, well then........

When you say with hot water, you don't mean place the rashers in hot water in a bowl, and then place the bowl in the microwave and put on defrost for a few minutes, or do you?

No either or.

Microwave it to defrost, the problem with microwave to defrost is you'll probably end up cooking it slightly, which won't do you any harm at all, but might affect the taste and texture, if you wrap your frozen backnin something (eh a freezer bag) if it isn't already, boil some water with your kettle, pour in into a basin and put the frozen bacon in that.

It'll defrost it in no time and less likely to cook it.

Got ya. Yeah, I defrost sausages regularly, sometimes they get a bit soft and warm and over defrosted but cook fine.

Bacon is pretty thin, I cook it from frozen most of the time.
From frozen, might try that too. Straight from freezer to frying pan with a little olive oil I guess?
