Would quite like a Blue face, but will not rule out anything else
Silver strap, with possible gold bits in dependant on style
Date, Maybe a stopwatch
Preferably automatic
Don't know what a chronograph is or why I would need one...what is it?

i will leave the recommendations to other people but a chronograph is combination of a watch and stopwatch. its usually 3 smaller dials on the watch face if its an analog watch, a revolution from each one represents a different amount of time.

Could always go for a citizen skywalk if you don't want to completely rule out digital?

i would say your best bet it to walk into a few jewellers and have a peek at the watches that are in your price range, maybe try a few on even if you arent intending to buy anything. everyone has their own tastes and the watches might look a little different in the flesh

For the same reason as people buy a BMW instead of a Smart, or a multi-core DX10 capable system instead of an Amiga.

Yeah, I mean it's just like cars and houses. Who really wants a big house with a swimming pool when you can live in a broken shed. And what a hassle to drive a Ferrari, much rather just have a rusty Robin Reliant.

Because nice things make the owner feel nice, a nice watch is worth more than the few hundred notes it cost to most people. Its the same reason i drive a BMW car, have bosch appliances, and solid proper furniture. Cheap stuff is not nice.

Re the OP, go to a jewelers and have a look at them, pictures are no good with watches.
 
How can you tell your buying a real watch when you do it over ebay? What checks can you do to make sure its real when you get it and not one someone has brought over from turkey?

Thats what the feedback is for. Make sure they have sold loads of watches and they're all happy customers.
