Spec me a dessert


Made this today, never had any saffron so made do with a cardamom and cinnamon syrup instead. Seperated them from the syrup at the end there so they dont go too soggy in the fridge, its a while until dinner time haha. Also excuse the crappy photo quality, phone cam ,_,

300g cream cheese
250g mascarpone cheese
300ml extra thick double cream
600g white chocolate bar
500g Hobnobs
large Knob butter
2 pallets of strawberries
sugar

1) Smash the hobnobs up and add melted butterto form a base, allow to cool.
2) Next boil some water in a saucepan, turn heat of. Place glass bowl above water (making sure it doesn't touch). Place chocolate in and allow to melt. As little stirring as possible, once melted set aside and allow to cool slightly.
3)Take one pallet of strawberries and finely slice, place in a bowl and sprinkle 1 tablespoon of sugar over and leave for 30mmins or so.
4) beat the cream and cheese together. Then mix in the still melted but slightly cool chocolate.
5) Use half this mixture to cover the biscuit base. Then neatly arrange the strawberries on top and poor over any juice.
6)Spread the remaining mixture over.
7) With the remaining strawberries, blend in a blender, place in a saucepan with about 3 tablespoons of sugar (or to taste), bring to the boil and reduce by half (or until reasonably thick and syrupy). Strain through a sieve. Allow to cool
8)poor over the cheese cake. Place in fridge to allow it all to firm up.

cherry crumble is the supreme leader of all crumbles. Its dead easy to make using frozen cherries too. Some ground almond in the crumble topping sets it off even better!
 
Absolutely delicious dessert that even your kids could make

1 x Pack of Chocy chip cookies
1 x pot of double cream
1 x flake
Any random alcohol

Wisk up the double cream until thick / place to one side.

Pour some of your favourite alcohol in to a bowl (sherry or brandy work well).

Dunk one cookie in the alcohol for (no longer than a couple of seconds or the whole thing will end up mushy).

Now slap some cream on one side of the cookie and repeat process (dunk slap lol) till you have created a log shape on a plate.

Now cover the entire outside with the rest of the cream so it looks like a nice Christmas Yule log cake.

Sprinkle top with a flake.

Place in fridge for a few hours.

made this again today, because my dad went out an bought all the ingredients (unusual as he's a man who hates shopping :p) and demanded i make another :p

I still the the stage where you've just added the melted chocolate to the mix is the best, tastes mazing and would be perfect on icecream while still a bit warm :D
