Spec me non-meaty midweek meals

The girlfriend and I seem to be in a bit of a rut when it comes to midweek meals.. recently it seems like we're forever eating chicken (green curry, creamy pasta) or other meat (sausages, bolognese, leftover stews/curries). Now that it's a bit warmer it's all starting to feel a bit overly-meaty and heavy going.

We're a bit rubbish when it comes to fishy meals... it normally ends up just being a bit of fish with mash and veg, or prawns in a thai curry or paella.

So, we're looking for some good fish or veggie meals that are relatively quick to prepare. Preferably less carb-heavy too etc..

Any good ones that I can easily add to the repertoire? :)

From your criteria I can only suggest a plate of salad or a block of cheese :confused:

Falafel and Bulgur wheat. You can get Falafel mix or frozen falafel at pretty much any major supermarket, and Bulgur wheat should also be available everywhere. The bulgur wheat can just soak in a little hot water for 10 mins or so and it's done, and the falafels will take about the same time. Serve with some pitta breads or wraps. If you're feeling adventurous, just fry some oil with North African spices (Cumin, Peppercorns, Turmeric, Sumac, chilli and Paprika) and stir it in to the bulgur wheat at the end, dress with Parsley or Corriander, the whole thing just helps moisten it slightly because Falafel can be quite dry, even when served with Hummus, which I also forgot to mention.

Ok I probably went a bit too far. Let's just say quick and easy healthy meals that are not based around meat :p
 
They look nice actually. And tempeh.. that's a new one to me. Is it easy to find? Does it hold together better than tofu when frying?

We actually really like our tofu stir fries, but I've always bought tofu that you need to spend 25mins frying in batches, before actually doing the stir fry. Does anyone use the pre-deep-fried tofu?

Tempeh does hold together a lot better than tofu (that is soft tofu). There's different types of tofu however I've only been able to find soft tofu in England which isn't appropriate for cooking other than miso soup.

Having said that, I actually used Seitan (found at Waitrose) to make that dish and it turned out perfectly fine. Seitain, Tempeh, Tofu all taste the same which is bland unless you season or cook it right.

I haven't tried the pre-deep fried tofu because the ones I've found in the supermarket already come pre-seasoned (with non-oriental spices) which kind of defeats the purpose of cooking it the way I want it.

I'd suggest frying your own tofu or going with Tempeh/Seitan.
 
I lived in South east Asia for 7 years (been back in Uk 3 years now). Since being back here I haven't been able to get the decent Tempeh that I was used to over there. I've actually started making my own now in small batches at home. I'll try and do a log sometime. PM for details in the meantime.
