Spec me non-meaty midweek meals

The girlfriend and I seem to be in a bit of a rut when it comes to midweek meals.. recently it seems like we're forever eating chicken (green curry, creamy pasta) or other meat (sausages, bolognese, leftover stews/curries). Now that it's a bit warmer it's all starting to feel a bit overly-meaty and heavy going.

We're a bit rubbish when it comes to fishy meals... it normally ends up just being a bit of fish with mash and veg, or prawns in a thai curry or paella.

So, we're looking for some good fish or veggie meals that are relatively quick to prepare. Preferably less carb-heavy too etc..

Any good ones that I can easily add to the repertoire? :)
 
Less meat/ protein heavy and not carb heavy.

From your criteria I can only suggest a plate of salad or a block of cheese :confused:

Ok I probably went a bit too far. Let's just say quick and easy healthy meals that are not based around meat :p
 
They look nice actually. And tempeh.. that's a new one to me. Is it easy to find? Does it hold together better than tofu when frying?

We actually really like our tofu stir fries, but I've always bought tofu that you need to spend 25mins frying in batches, before actually doing the stir fry. Does anyone use the pre-deep-fried tofu?
