Thinking of a Imac 27

Depends on what model. However I don't think the 5670 or the 5750 will drive games at 2460 x 1440 with all bells and whistles.

My last gen 27" copes ok with modern games with a 4680 (or whatever it is!)
 
I'm not a huge gamer anymore (well not PC games anyway) but I tired a few via Win7 x64 Boocamp and they ran ok.

I tried Crysis at native 2560x1440 with max and it ran ok, although far from perfect, but that is a pig of a game. I also played Half Life 2 with the full cinimatic mod at max on full res and that ran perfect. F.E.A.R 2 also ran maxed out on native res pretty much perfect.

I have the iMac i7 @2.93GHz with the standard 4GB RAM btw.
 
As LordSplodge said, it depends what model you get.

I'm using a MacBook with 2GHz Intel C2D, 4GB DDR3, NVIDIA 9400M and a bootcamped copy of XP 32bit. It's plenty for me. I'm not sure about frame rates but it'll run Battlefield 2 on high settings with no problems, L4D 1&2 on medium settings and Fallout 3 (and to a lesser extent, Oblivion) on low settings.

Not the highest of fps but they're all perfectly playable and they don't look terrible either. To be honest, this machine is capable of more than I imagined it would be.

That should give you some idea of what to expect from even an entry level Mac.
