Does this actually work? Or is it a gimmick, will it be up for heavy duty kitchen duties?

You might want to have a look to LVT it's water proof and it's quite tough

Bamboo, it's a grass so is happy to be wet.

Have waterproof laminate in our bathroom, actually its not laminate its PVC, not sure on the difference.

You can get a sort of rubber/mastic to go between the board edges
Can`t say how good it is ,i have only used it once on a job
