What CPUs Should I Be Looking At For A Production Build Nowadays?

Last build was 2014 and I've been out of the loop on hardware since. Recently I always thought I was gonna get the Intel 16 core socket 2066 (the 18 core showed as slower per core speed) but now with AMD competing is there something better on the AMD side?

It will be for video editing and also music production.

For music production core speed is important. I get an insane boost by ramping my current 5930k to 4.5GHz performance mode. For video editing I think cores are more important?

Not looking to go mid or low range either so if Ryzen 5 it will be the 5950x or better.

Can you afford the 3990X? I suspect the is probably no but is your PC used for work i.e is it used for making you money? The point is time is money and the less time you have to spend it waiting for a job to complete the better for you.
 
Ryzen 5950x is a highly capable CPU. But you are limited by the AM4 platform. You need to see if the Max RAM is for you.

there is also the threadrippers 3960x 3970x 3990x. These are not cheap but goes from 24c all the way to 64c. YES 64 bad boys.
 
I haven't checked the reviews for music production with the likes of cubase on Zen 3, but I imagine whereas before Intel used have a advantage in this area in terms of latency I doubt that is the case anymore.
A 5950X will give you the cores and threads for multithreaded encoding for video, as well as many instruments as you guys like to use for music production. But also with the single threaded speed for editing and music prod that intel cannot match. It's a no brainer to go AMD this time, if you can get your hands on one.

Unless you have lots of rendering to do, can't see what the 3990X will offer you. The threadrippers will get updated at some point next year.
