I'd recommend the Jedi Night series from about 10 years ago. Not sure how they hold up now but they were awesome at the time.

Not sure anything similar is out there now. I guess the Old Republic is great for Star Wars fans. Features shooting, but it's an MMO with auto targeting.

freelancer is a lot of fun.

as is the X series (but they are more sandbox type games which need a lot of time)

you should look up a game that is still in development called Star Citizen, looks absolutely amazing long time away from being released but the concept looks great, they're asking for pledges right now to help with development.

freespace 2 was made in 2000 still playable?

1999 actually I think :)

When modded (as suggested) it is extremely good, the combat and storyline are brilliant, far better than Freelancer (which is not a bad game itself, but for dogfighting, you really can't get any better than FS2, although I haven't played Eve).

Eve can be very fast paced but in terms of shooting stuff in space it won't match up to an arcadey first person space game like freespace, etc.
