Which surround sound system - HELP please!!!

It will only be stereo I think, not DD 5.1 that an optical cable can give.

Thanks mate. Is this just the case with Sky? What I mean is - will by blu ray/PS3 link to the tv via the AV receiver, and provide blu ray quality sound with an HJDMI cable?

Problem is that Sky use outdated hardware in their boxes which doesn't allow 5.1 over HDMI, which is just stupid, hence why you need to use an optical cable to do it.

Once you get your optical cable you need to set it up in the following way:

Connect SKY HD via HDMI2 (CBL/SAT), press setup on the remote, then go to digital audio - select the relevant input (CBL/SAT most likely) then change it to OPT1. Whilst the receiver is in CBL/SAT mode, press AUDIO on the Onkyo remote. On the receivers display BASS will show, scroll down with the remote until you get to AUDIO SELECTOR, this will show HDMI (as the priority setting). Change this to OPT and press ENTER to save the setting. You will now get DD5.1 through the optical cable (where transmitted).

Personally I've connected my Sky box directly to my TV (panny 42" 1080p set) via HDMI so SWMBO/the kids can watch stuff without having to turn the amp on constantly. if I want to watch something with 5.1 or a blu-ray/Xbox then I need to turn the amp on, but when kthe kids are just watching cartoons I don't see the need for it.
