Why do people say "See you later mate"?

It's a social protocol. It's a way of saying "Goodbye person that I have amicable feelings towards and would not be against encountering again." rather than a literal "see you later".
 
Having recently left my employers knowing I'd only see a handful of colleagues ever again, it was a lot easier to say 'see you in a bit/later/soon' than 'goodbye person I never really liked, have a good life'
 
Is it me or does this forum have a lot of people too far up their own asses to realise that this is a JOKE? I would have thought the "arrgh Im so annoyed" bit would've given that away. I was just having a bit of fun. I'm not breaking any rules in order for me to be "banned". I apologise if you would rather prefer seeing massive exciting posts about fish tank setups, but the only people who deserved to be banned around here are the type of people who tell me to go cut myself over a forum post.

The bit where you said "It's actually making me really annoyed" was probably the bit that made people think you were being serious.

To create a thread without receiving abuse, the best tactic is to pre-empt it, admit you are being silly in some way, laugh off all the criticism and make ample use of the tongue smiley.

A lot of phrases get distorted along the way. It was probably originally meant to have a set time, like "See you next tuesday" and someone basically modified to too "See you later". These phrases catch on in the same way as music tastes and fashion trends do.
