Come to think of it wouldn't a distance sensor be a much better way of measuring flex?

No, as the ground isn't flat, and the rules around wing flex have absolutely nothing to do with the ground.

Unless your talking about distance of the wing ends from some other part on the car, which they have done before with a nose mounted pod that had poles attached to the ends of the wings.
