I'm using an edgerouter x currently with 2x LTE connections which fluctuate greatly depending on the time of day it is which makes it hard to run QoS.

Would one of these switches make things better for things like gaming or streaming?

Also does anyone know if the incoming line from the router to the switch should be on a low or high priority port?

No. The issue is the WAN side, changing the switch to have local QoS (that your router could likely do a better job of anyway) won't help as you aren't hitting a traffic limit on the LAN side that you need to prioritise certain LAN ports for.
