This is probably in the thread somewhere but I have a couple of questions.

I have a Santander debit and credit card. Can I set up both in Apple Pay or is it a one card only deal? Also if you can set up multiple cards, when paying for something how does it know which card to use?

Yes you can set up multiple cards and have one as the default. Before placing the phone near the reader, double tap to bring up the Apple Pay dialog and then swipe through the cards and pick one. You can then touch the reader at that point. Note that the double tap thing opens the wallet so you can pick loyalty cards, flight tickets etc and not just payment cards.

Worth pointing out that you can use Apple Pay anywhere that accepts regular contactless payments. Some shops aren't labelled specifically as "Apple Pay" but it'll work :)
