I'm looking to grab some sticks now, but I don't know what I should be looking for seeing as I'm on AM4.

I'll be upgrading board & cpu and when the X3D zen5 parts are available, whatever the 16c part is (8950X3D)?

I'm looking for highest capacity 6000Mhz+ rated sticks, what are my options?

Edit: a bit of digging reveals some success with 5200 high capacity kits on 7950, what's the perf difference on AM5 going from 5200 - 6000?

I wouldn't buy now unless you're really desperate. The high capacity kits (e.g. 96GB, 192GB and 256GB) are still really immature and the volts/timings should drop over time, while the frequencies go up.

what's the perf difference on AM5 going from 5200 - 6000?
For the X3Ds, not much at all. For the non-X3D, it depends on what you're doing.

You might find these of interest (first is for gaming, includes a 7700X and 7950X3D and second is for productivity, with a 7950X).
