Your favourite soup?

My favourite at the moment is pea and ham.

Ingredients -

2 gammon steaks cut into cubes
One onion
2 small/medium carrots (grated)
2 potatoes (when blended thicken up the soup)
3 knorr vegetable stock cubes
3.5 pints of water
3-4 cups of peas (I like the Tesco frozen garden peas but you can use what you fancy)

Firstly I chop the potatoes and boil them in a separate pan, once done leave them to one side until later.

I then cook the gammon and chopped onion in a bit of oil (just enough to stop it sticking) for 5-7 minutes.

Next I add 3 knorr vegetable stock cubes to 3.5 pints of boiling water and add it and the carrots to the pan with the gammon and onions. Bring it to the boil then simmer for 20 minutes. Then the frozen peas are added and cooked until they are soft (5-10 minutes I imagine).

Now the potatoes are put in a blender with about half the mixture from the pan, blend then add back to the pan with the rest of the soup. I heat it for about another 5 minutes and then serve.

The amount I make could easily feed one person for a week if you freeze it so you may want to adjust some of the values if you're after something light :).

This is very easy to make and I love it!
 
I know some people may well be disgusted by this but Baxters make a lovely Haggis soup :D

Also my wife makes the best potato soup in the world :cool:
 
I love soup. I'm also not feeling well at the moment, so soup is a major part of my diet.

Chicken noodle (a must for when you have a cold!)
Cream of mushroom (with extra mushrooms thrown in)
Mulligitawny (or whatever - yummy)
Beef/Lamb Big Soup things.....
Minestrone.....

Actually, just about any soup does it for me, but I like them with "bits" in, like croutons, or some pasta, or some veg, or all three :D

The only one I don't like is plain tomato soup. Blech. It's the Brussel Sprout of soups.:eek:
