I'm on a mission to find the best cheese to combine with chips - I've tried many and still have yet to find a cheese that is full of cheesey goodness.

I'm after something not bland but in fact has lots of flavour - something that is ideally already grated and melts onto the chips without needing to wait ages too.

we're really into Colliers Welsh Cheddar at the moment. Comes in a black packet from Tesco. Really nice flavour, melts well and goes with anything. We add it to pizza a lot :/

I'm a bit partial to the Mexicana that they keep behind the cheese counter, too. What a wicked idea, like a wizard who just sits all day, taking stock of all his cheese!
 
I'm really enjoying melting some Monteray Jack onto my sandwiches at the moment, might be worth a shot on chips. Not sure if you can get it in it's grated form however.

Just wondering, do you have a cheese grating phobia or are you just too busy for a grating session?
 
Mixture of Monterey Jack and Mature cheddar.
Cheddar has bags of flavour and mixing in a bit of Monterey Jack means it has a better consistency when it melts.
 
Ah thanks,made a note of the various cheeses mentioned and will sample a few tonight :D

BTW I'm not an english prude or anything, in fact I never had cheesey chips in my life until 2007 when a workmate asked me to join him on "chip day" (mondays and tuesdays at work for lunch :p)

I'm fairly impatient when it comes to making any foods, when making tea I'll feel like drinking it before I've even poured the milk or when making pasta I'll munch a few whilst it's still heating up!

It's the look and smell, it makes me wet*






*at the lips :)
 
Chips and grated Applewood is what you're after. Adds a nice smokey taste to the chips.
 
would a good Mozzarella and (insert other cheese of choice) not be the a good combination to try? Grated mix of course, as you get the stringy-ness of the Mozzarella with the awesome flavour of whatever other cheese you pick?
