I'm going to make my own chips!

Kerr Pinks generally make the nicest chips, in my opinion anyways.

In fact, just cut up some there now which are happily simmering til golden in a deep fat fryer filled with sunflower oil.

I'm hungry now.
 
Oven chips actually resemble chips because of the special coating on them, that's why the cheap ones are usually rank.

You can't just chop up potatoes and put them in the oven, they'll just be oddly shaped roast potatoes.
 
Good recipe for chips
Use Maris piper potatos
Cut into thick chips
Boil untill surface JUST going soft
Wipe dry,allow to cool
Fry untill JUST starting to go going brown
Drain and allow to cool
Fry again untill how you like 'em.
Eat with ketchup.
 
Just finished mine, which were really nice (crispy too), accompanied by bar-be-qued salmon.

Should stop reading this thread or it'll just make me hungry again.

Will have to try that dripping some time, if only to have tried it.
 
Ah, I love dripping on toast. Haven't had it in a while though, mainly due to the lack of decent quality butchers around here.
 
Wedges = cut up potatoes into wedge shapes, boil for 10 mins, then place in oven with seasoning and oil.

make rosti instead.

Take some potatoes and grate (leave skin on). Squeeze out liquid.
add salt and pepper. Add spices/herbs if you like.You can then form patties and fry in pure butter. But I like adding a little flour just to help it bind, some prefer eggs, some prefer 100% potato.

There much nicer than hash browns.

I'm sorry - but how thick the patties and how long do you cook them for? I have tried them twice but the bottom and top burn and the middle is raw spud :(
