I'm a scaredy-cat when it comes to water in my engine bays...I don't mind if it's a bit grubby
Looks good mate - probably been recommended already, but use Gliptone Liquid Leather on those seats. There is a kit you can buy I think which re-dyes them, but you should be able to get them looking like new again.
Have you got the Panier bags for the T-bar panels? I bought some recently for a mate for about £40 - worth getting some if you don't have a pair already.

That's the stuff you want - website is a crapper but don't let it put you off, it's apparently very good stuff. I tried using a normal cleaner and conditioner on my mate's MR2 with the same seats (similar condition) and it needs dying to get it all black again.
