I've recently had a bit of a PS3 games clearout and in doing so identified a number of games I couldn't bring myself to part with.

Killzone 2 - I may well hang onto this until KZ3, in the meantime I'll try and work towards the platinum trophy.
Everybody's Golf WT - Supremely enjoyable game to unwind with, never gets old.
Little Big Planet - User levels and the level editor itself make it one that'll just keep on giving!
SFIV - SONIC BOOOOM!
Valkyria Chronicles - Not played it properly yet, but I know I will and get the feeling it might end up being a hard game to source.
Mirror's Edge - I bloody love this game, it deserves the effort to get a platinum trophy, I've not explored the DLC much yet either.

Pretty much every game i own that isn't for the Wii :p Traded in all my Wii games aside from Zelda and Mario Galaxy. The only PS3 game i've traded in so far was Lego Star Wars as it was worth more on trade in than i paid for it and i had completed it anyway. Haven't had my 360 long enough to get to the point where i might trade stuff in, so far i think i'll be keeping the three i've got (kameo, Lost Odyssey and Halo 3)

[EDIT] Oh! I traded in Guitar Hero World Tour too!

It's easier for me to list the games i've traded in rather than the ones i keep :p I inevitably want to replay a game at some point down the line so i figure i may as well keep them.

Eh, guess growing up I generally traded in most games. And if I wanted to replay them just buy them again. Some games I kept for a long time though, like Mario 64, Mario Kart, Goldeneye, Sonic/various RPGs on GC; but nowadays I mainly play PC games and yeh, no need to get rid of any of em

Halo: Combat Evolved. Everything else gets bought and sold over time. The only reason I keep my old Xbox is because the 360's emulation is horrible.

I don't get attached to games. I've never held on to a game for more than a few months.

I sold all my MGS games a while ago. Even the limited edition Essential collection. Completed them, sold them.

I never really get the urge to re-play games. I'd rather play the games I haven't played or play new games.

Tend to only keep games if they are things you can't technically 'complete', that have excellent multiplayer, or have good replayability value. My 360 collection currently consists of Halo 3, COD:WAW, GH:Metallica, Fifa '09, Rock Band 2, and GH3.

I've owned pretty much every good game that has been released on 360 at some point or another, but once I have completed a game or got bored of it I tend to sell it or trade it in. I don't see the point in having a massive games collection.

PC
BF2 - Too damn good.
WCIII - " "
Baldur's Gate Boxset - Will get round to playing all 400-600 hours of this one day.

360
Mass Effect - Utterly brilliant game, ready for another Insane playthrough.
Forza 2 - Best racing game about till #3 arrives.
Halo 3 - Awesome multiplayer & coop with friends.
Street Fighter IV - I intend to get a stick so I can actually play the bloody game as C. Viper.

I do it all the time - buy a game, sell it, buy it again, sell it, buy it again. Totally nuts. Roll on digital downloads so my changeable mind cannot be unchanged once the purchase is made. :D

The games i have never got rid of are;

Splinter Cell 1,2 and 3 - Great games! Probably my favourite series of games! Double agent was rubbish though.
Halo 1,2 and 3 - Pretty much self explanatory.
Metal Gear Solid 1,2,3 and 4 - Love the series.
Gears of War 1 and 2 - Kept the first as it was a staple game of the xbox and was great online with the people i played it with.
Zelda Twilight Princess!

I like to collect tbh, so ill probably keep all the decent exclusives and hold onto them for years.

These I'm keeping this gen:

PS3
Motorstorm
Motorstorm - Pacific Rift
Ninja Gaiden Sigma
Heavenly Sword
LittleBigPlanet
Uncharted: Drake's Fortune
Everbody's Golf World Tour
Resistance Fall of Man
Resistance 2
Metal Gear Solid 4
Killzone 2

360:
Gears of War
Gears of War 2
Fable II
Halo 3
Crackdown

Wii:
Super Mario Galaxy
Super Paper Mario
Mario Kart
Smooth Moves
Resident Evil 4 Wii
Zelda Twilight Princess

There will be a few multiplats like COD4 that I will probably keep as well.
