Lots of threads about this already but Gears of War 1+2, Halo 3+ODST, Kameo, Rainbow Six Vegas is a short list.

Hated L4D2 tbh

Enjoyed the first one but it just seemed outdated when playing the sequel.

You can even play Tekken 6 co-op online now, not as good as a lot of others but something a bit different for you.

Modern warfare 2. Cant believe anyone hasnt mentioned that.

Boarderlands is a great one.

Then you have loads of sports games if thats your thing.

Co-op online or on 1 xbox ?
If its sharing 1 machine, the Lego games are great in co op, especially the star wars ones.

Completed GoW 1+2 with my brother using co-op and it was great fun. Really enjoyed it.

Yea Resident Evil 5 is pretty good for co-oping wise.
