If you were to include mods, then I think HL2 would be a strong contender. There are loads of different mods for it, covering all sorts of different genres.

Cheating? Yes, but I think it makes sense.

For MP I'd go Battlefield 2142, I loved that game to bits, but for SP it's got to be Toejam & Earl, it's infinitely replayable.
