I fancy making a good curry from scratch. Anyone got any good and tried recipes, particularly for lamb balti;)?
When i was in New Zealand my mate knocked a few up and had a load of spices in little jiffy bags-no idea what they were but it tasted great.
What was the spice that turned the sauce dark brown????
He also knocked up some lentil thing as a side dish-that was good too but typically i can not get hold of him to ask for instructions:mad:
 
No idea how to make a lamb balti or that lentil thing, sorry, but I too would definitely like a decent recipe for both if anyone has one.

This is the recipe I usually use when I fancy making a curry (no idea what it's called):

Fry an onion, add chicken legs/thighs/breast and cook till brown, add a thumb of grated ginger, two/three cloves of grated garlic, a tablespoon of cardamom pods, cloves, peppercorns, cloves, a heaped teaspoon of cumin, turmeric, garam masala, a level/rounded teaspoon of red chilli powder and fry for a minute or two. Add a four/five rounded tablespoons of almond powder and stir to make sure everything is coated with the powder. Add six/seven tablespoons of plain yoghurt, a can of chickpeas, and some water (up to half a pint). Simmer until the meat is done (up to 45 minutes, you could leave it for longer though).
