Can you remap the control in any way?
That sounds like the standard for the ol' c-pad back on the N64.
Nope, no option to do it, and not likely to be patchable, so stuck with this. Here is the options menu for you guys:

Then The camera Option

And the sensitivity option:
And finally what the touch screen is used for since we've established it isn't aim:

Guns/weapons/accesories work like toggles. Middle between the 2 headgear options (top 2 corners) is whistle, left of that is the map. The bottom, where it says save is context sensitive so changes to open door, open door stealth, break door, pick lock the works, the left arrow on that scrolls through that list (as far as I can tell cannot just *touch* the option you want, and right arrow bit chooses and activates command.
Like I said some quirks...
Well, just been playing on mine for the past couple of hours. I got SSF4 and PES 2011.
I have to say that SSF4 looks fantastic on this. It does take some time to get used to playing on the 3DS as I am used to use an arcade stick. The 3D is great on this.
PES 2011 looks good on this but I find I have to turn the 3D off. Maybe I need to play a little with the slider. I am finding it a challenge to play but that is probably because I normally play FIFA on the Xbox but I am enjoying it.
Well I read PES has some of the best 3D effects as far as spacial awareness goes since you really feel where you are on the pitch, but then I suppose it zips about a bit quick? I dunno, I am with ya though, I can easily see myself turning off 3D mode every now and then. Not yet, still loving it, but it will wear off after a while. I mean for games where it seems to have little impact I could easily see turning it off.
Yeah that's kinda puzzling, for Nintendo to fit the 3DS with an analogue stick of sorts and then for Ubisoft to completely ignore it and use a digital control method for aiming, despite the console having several analogue input methods. Smacks of lazy development and planning imo.
Yeah I pre-ordered it assuming touch screen aim (ala Metroid, CoD etc on DS, since it worked well minus a little hand cramp after long periods, but hey since the 3DS gives headaches after long periods they kinda go hand in eye?), but it still kinda works. So far (playing "Hard" I haven't encountered a situation where I needed a quick aim, but I am trying to be stealthy as the game is kinda designed for, but there could be a section which might become difficult because of the aim, I mean it is very 1996...
