Looking to update my rig as follows:

Intel Core i7-2600K 3.40GHz (Sandybridge) Socket LGA1155 Processor
Gigabyte Z68X-UD7 Intel Z68 (Socket 1155) DDR3 Motherboard
Noctua NH-D14 Dual Radiator CPU Cooler
Corsair Vengeance Low Profile 8GB (2x4GB) DDR3 PC3-12800 C9 1600MHz Dual Channel Kit
Corsair HX 850W ATX Modular SLI Compliant Power Supply

Will be looking to OC the cpu to 4.8 ~ 5.0 ghz

Any issues with these components, any other recomendations ?

Nice setup for video/image editing.
Overkill for gaming.
I wouldn't bother with the gigabyte board. its a semi-z68 board. no Lucid Virtu due to lack of onboard graphics, therefore rather overpriced.

What you using the rig for?

Main uses are Gaming and some Video/Photo editing.

Which board would you suggest that allows easy and stable OC?

I know 8gb ram is overkill for gaming but its not that expensive, so I thought I might as well have 8gb rather than 4gb.
 
The Asus Z68 pro, or the Asrock Extreme 4. Also some P67 like the sabertooth, P67 Extreme6, and P8P67 pro (although Asus has teething problems wiht its P67 boards).

Corsair Vengeance Low Profile... Nice!

It will depend on how good the chips rather than the motherboard for clocking.
some people track batch numbers etc.. which I've never done so can't help there.

But all boards now have easy OCing.
Quite a few people recommend:
Asrock Z68 Extreme4 Intel Z68 (Socket 1155) DDR3 Motherboard
and any ROG board is likely to be insane at overclocking:
Asus Maximus IV Gene-Z Intel Z68 (Socket 1155) DDR3 Motherboard
Asus Maximus IV Extreme-Z Intel Z68 (Socket 1155) DDR3 Motherboard

Although the Maximus extreme is insanely priced as well. Only really there for benchmarkers IMO.

For easy OCing I'd look at the MSI Z68A-GD65 or the Asrock Z68 Extreme4.

PSU is solid. You looking to power a couple of Graphics cards with it?
CPU Cooler is huge so make sure your case can fit it! Like the look of the low profile RAM as well!
