The MSI motherboards have the best layout in my opinion although I am not keen on their UEFI Bios lacks some overclocking features but they have got rid of PCI! at least one of the manufacturers has moved with the times! :)

I had intended on purchasing the Gigabyte GA-Z77X-UD5H, although the Biostar TZ77XE4 appeals to me too.
 
Disappointed only one of these boards has Thunderbolt, so much
for it being widely adopted with ivybridge, at this rate more ultrabooks
than desktops will have this new connector this summer

It depends on the person. For me no, not worth waiting for. if its not out by the time I build than I won't use it. Also remember what happened with sandy bridge when it first came out? It had a annoying bug.

Some of these are nice boards mind
