New Gaming Rig - OS?

Neither, get either Home Premium Retail or OEM.

Since its a gaming rig, you probably won't need any of the features in the Professional, let alone ultimate versions.

Between the two HP versions, OEM will be tied to the motherboard, meaning that if you upgrade then you will need to buy a new copy of windows. The retail version is more expensive, but even if you upgrade several times you can still keep reinstalling the retail version.
 
Home PREMIUM Retail :)

Don't need any more than that on a gaming rig. Had Ultimate on mine to start with and switched it to another rig and installed cheaper premium instead

Had to buy another copy when I made 3 PC component changes


Whats the main differences between Home, Professional and ultimate?

Home = home user
Professional = business / corporations
ultimate = business / corporations with more money or encryption needs
 
Are you using 16GB of RAM? As Home Premium will only recognise 16GB and your RAM + Graphics Card memory would exceed that.

I *think*.
 
No reason to have 16GB memory at the moment though and probably won't be for a few years yet, due to most programs being limited to ~2GB (as they are 32 bit).

8GB is more than enough.

Basically just a few useless features unless you're on a domain,
Like branch chaching, direct access (which requires IP_v6)
Bit locker (encryption of the drive)
App locker (locking down applications for users)
Like I said 'useless unless your on a domain'
Home premium will be fine (Y)
Also home premium will only recognise 16GB of ram as others have pointed out
