Last night I had some friends round for dinner so made the "Epic Roast Chicken Salad" from my Jamie Oliver's Great Britain cookbook. (Was almost put off by the use of my most hated word - Epic - but decided to let it go )
It was fantastic - especially as I got loads of different types and colours of tomatoes which were sweet and delicious. I also added some chorizo because... Well, what can't be improved by putting some chorizo in?
I would say though that the recipe is for 6 (and I was making it for 6) it says to use a 1.2kg chicken which I thought was a little small when I went to supermarket. I actually used a 2.1kg chicken as well as double the amount of green beans, and extra tomatoes just because I love them, and the 6 of us finished it without having enormous portions, so I think we would have been a little hungry had I stuck to the recipe!
