Just to check - you despise religion and what it has done to people but you want to perpetrate some of the worst excesses carried out in the name of religion? That doesn't strike you as at all incongruous or self-defeating?

When people attack you, you are allowed to use self defence and I believe that religion has attacked every individual on the planet to one extent or another Maybe barring 1 or 2 still remote Amazonian tribes.

The milgram experiment showed that a majority of people under the right conditions, backed up with an authoritative figure was capable of inflicting a possible fatal electric shock to a complete stranger. So who knows what any of us are capable of under the "right" conditions.

I wouldn't torture them because they don't believe the same things I do, I would torture them because of the damage religion has done to the world.

You're allowed to use reasonable force in defending yourself and once they aren't posing a threat to you then you must stop or you have gone beyond defence into perpetrating an assault yourself. I'm not sure quite how you think you might square away torturing people just because they're religious with self defence but it doesn't fit into any interpretation of self defence that I've ever heard of.

You'd torture someone for things they haven't directly done, instead you'd torture them for being a member of a group which has had bad things done in its name at some point in history?

I'm anti-theist, but when you say 'them', who exactly do you mean? anyone who was unlucky enough to be baptised? I was baptised at an age too young and I had no choice in the matter.

Would torture somebody who tortured somebody I cared about. I'd just do to them what they did to me/a loved one. If somebody shot my mother, I'd shoot them for it. If somebody tortured my missus, I'd torture them, and so on.
