If I had to play 3 games on Ultra, coming from always playing on low..

Was tempted to say Crysis, but the fact is that looks really good on Medium (and probably Low) anyway so if you've already played it, don't bother.
 
Most of the games coming out of studios published by Square-Enix; such as, Hitman: Absolution, Tomb Raider (as mentioned) and Deus Ex:Human Revolution can look really good if your sitting a couple feet back with a controller. :)
 
Crysis 3 if you want the sheer "omg that looks real" factor, I'd say it's still the best graphical advanced game straight out-of-the-box for PC. After that, I'd say Metro Last Light or Witcher 2. Good to see others like DX:HR got mentioned, I'd also say Mirror's Edge can look pretty stunning at maximum, and Bioshock Infinite is just so vibrant and colourful.
 
Bit of a curve ball, ever ran Flight Simulator X on full with a few mods (PMDG 737/777, ORBX UK, FTX Global, REX weather)? Only today is our hardware basically good enough to max it.

Assetto Corsa looks gorgeous with the graphics cranked up too.

Apart from the usual Battlefield, Crysis, Bioshock: Infinite was another game that blew me away when I got my latest rig, along with Total War: Rome 2.

I'd recommend differently but they've already been posted a billion times, so...

DayZ Standalone or ARMA 3 (3 does look better) with forced anti aliasing looks great. I used to hate the ARMA visuals but they are growing on me, just looks so real sometimes despite being quite poor engines. It's probably the scope and amount of assets on screen, you don't see it in games often at all.

Serious Sam 3, not the most technically advanced game but there is just something magical about pure PC experiences. Looks fantastic and runs just as well.

The Witcher 2, quite old now and DX9 limited but the crispness and art style make it seem surreal.

Also, google SweetFX, it works with most games and there are preset configurations out there for almost every game that it works with.

EDIT: Can't forget Alan Wake, I know that's 4 but oh well. :p

But if I was to pick one game which just blew me away visual-wise it has to be Crysis 3 - best graphics on any game I have ever played. Crank everything to maximum settings (excuse the pun ;)) and you will cry from both amazement and from the horror as you watch your framerate drop below 30fps :p

It is one of the only games where I cannot have all settings at maximum at 2560x1440 - the AA used in Crysis 3 kills your frame rate so I had to set mine to the lowest (not that it makes much different at 1440p anyway) in order to get over 40 fps.
 
So,

I'm about to get my hands on a stupidly priced rig and I've always played games on medium/low and never had a "omg wow that looks mental" moment on a PC. So, what would the top 3 games (Out now or coming soon) that I'd have to play just for the way it looks?

Not meaning to rain in your parade at all here, but just taking from a point that popped up in a GD thread the other day...
(where a student thought that an £80-100 chair was high-end seating)

But what graphics card(s) are you going to have in this stupid priced rig? I'm aware that "expensive" to one person can be "lol ha!" to others, and there does seem to be a lot of graphics card overkill on this forum. It's no bad thing, but there's little point in getting excited over some of the most demanding games out there, only to find they're actually too demanding to run because you're a student and to you a £1000 PC is 'stupid price'

If you spent £1000 to max out today's games you spent to much, just saying.

I'd have to agree, i have a 3770k with a 7870 and i can play every game on high or ultra, even the new battlefield 4 i play on high and the rig only cost me £690. my friend spent £490 using b grade parts and got an i5 with a 7850, same thing he can play any game on high to ultra. you dont need to spent 2k to get a decent computer, you need to spend between 50-800 to get a decent computer, 2k will just get you a longer lasting one
 
for any game you play... see if someone has a "sweetfx" config for it.... turns BF3 from a blueish kinda blurry vaseline smothered eye sore into a crisp colour vibrant eyegasm ;) difference is literally night and day :D

farcry 3 I think would be a good shout too (and found out there's sweetfx for it too ;) ) as it has pretty big landscapes, rich with colour, and you can view it all from a little glider!!! boom!!! do it! do it now!!!

Skyrim + Mods OR Metro: Last Light

AFAIK these are the graphics kings on PC at the moment but bear in mind that one of the most beautiful things about our platform is that ANY game can be tweaked/modded/configured to look amazing.
