Not a big fan of turkey in our family so we're going for a large leg of lamb with all the trimmings.

Interested to see what others have got planned.

It's easy! No pressure at all, just plan ahead. The first Christmas dinner I cooked for 14 people I just worked out timings of when stuff had to go in and out of the oven. Best thing to do is do as much prep as possible the day before, don't peel your bloody vegetables when you've just put the meat in.

Even easier! I think lamb is a lot more forgiving than turkey. Slow and low for lamb is great, but equally if you've messed up and haven't left enough time, it's just as nice seared and done quickly.

Good luck! No idea what I'm doing yet - can't be arsed with turkey though.
 
I'll be cooking for our house Christmas next weekend although I won't have a hangover from hell this year unlike the last couple :D
It's a nice easy one though, big lump of meat for me and one of my housemates then my other one is a veggie so she just has all the trimmings.
Then the dog gets a little portion too.
 
I will be half hung over, half drunk and I'll pull an amazing dinner out of the bag - like usual! :D

It's just the best roast dinner one could produce, nothing complex.
 
Nope, pub-bound with a colleague as I am single for the first Christmas in 6 years, and it's too expensive to fly to SA for the holidays as it's the middle of summer.

aww thats sad, make sure you have a nice dinner and a few nice coffees that will make up for it. So are you from SA originally??
 
Cooking for seven this year. Had plans to make a sumptuous feast of which nobody had ever seen before. Some amuse-bouches, a selection of starters, a big goose and all manner of wonderfully cooked vegetables done with a twist, three different mini-desserts, cheese and port then whiskey and cigars.

The missus poo-poohed it and reminded me I would no doubt he half-cut by mid morning.

This is a very good point so am now just doing what everyone else does. :(
 
Having just cooked Thanksgiving dinner here, spatchcocked turkey is the way forward! 12lb turkey cooked perfectly in under 90 minutes? Yes please!

Also highly recommend cooking stuffing in muffin tins - stuffins are most excellent as you get lots of the lovely crunchy bits but keeps the moist stuffing inside :)

Think this year for Christmas a prime rib roast is on the cards...drooool

I'm away on holiday over the whole of Christmas. :(

I am doing Christmas dinner for friends this weekend though. Bone-in rib of beef is on the cards, plus all the trimmings.

Just been trying to think of a starter actually.. tips welcome.

First time for us too. No turkey here either, we've ordered a nice big piece of fillet from the butchers. Looking forward to it to be honest!

Nice, I do like a rib of beef too!

Soup or smoked salmon would usually be a bit of a cop-out - but for Christmas dinner the main course usually turns into a bit of feast - so a lighter option can be a boon!
 
I do like the sound of that!
I used this recipe as the base with sourdough bread and also modified to make it vegetarian for one of our guests (the things you do...)

Made a veggie stock a few days beforehand using Kenji's vegan broth recipe, subbing out the mushrooms because of another guest being allergic and threw some miso paste into the mix instead.

Then instead of sage sausage I used a bit more sage and added maybe 2 cups of roughly chopped chestnuts which I'd roasted the day before. In total it made 18 stuffins and they were pretty much the best stuffing I think I've had :p

My Christmas dinner this year will most likely be made by some underpaid cook on a drilling rig somewhere in Norwegian waters - unless I get a reprieve; in which case it will be made mostly by my Mam (with help from the rest of us).
 
Preparation is the best point here. We're lucky enough to have a big double oven too so that should really help out.

We all know the chef's red is out, uncorked and poured by 10am! ha-ha
