Ideas for sweet potato

My ultimate sweet potato recipe.

1. Madeline in thin slices.
2. Place on a baking tray, generously salt and pepper.
3. Place a backing tray on top, sandwiching together.
4. High heat 20 minutes

5. Remove, while cooling a little make the following dip;
(Natural fat free Greek yogurt, loads of pepper, few squirts of 1cal garlic spray) Mix vigorously

6. Serve immediately as crisps and dip


This has got me out of some tricky spots when craving badly for a cheat meal :)

I love sweet potato - roasted or sauteed I can't stop eating it! Even mashed, with a touch of nutmeg and cream - amazing!

Regular potatoes are great too though.
 
Rosti made with sweet potatoes are amazing.

Grated, squeeze excess juice out, combine with finely diced shallots, garlic, ginger, chilies, fresh coriander lime, seasoning, then shallow fry in coconut oil till golden brown. Makes for a great breakfast with poached eggs.
 
Jamie Oliver recipe I came across a few years ago is a staple in my diet.

1 or 2 sweet potatoes, skin and cut them into chunky bits fling in a microwavable bowl, half a lemon on top and cover with cling film. Stick them on for 7-10 mins.

Chop up a handful of coriander, chili and feta cheese. Once the potatoes are done mix it all together and a wee squeeze of lemon juice to finish. The idea of microwaving them put me off initially but they really are nice.

Slightly alternative, but I made some sweet potato mash the other day and just added tiny bit of butter and cinnamon. Tasted brilliant!

sounds epic, definitely something I need to try!
