pick a hub..
select the switch ultra hub for cheapness (been running these for ages, no bothers)
select the colour and spokes (normally 32h)
select the required axle adapter (guessing quick release on the specy?)
select shimano or sram freehub
pick a rim....
now this depends on the style of riding.. stans rims are great if you want to spend £80, otherwise ive been running superstars own DS25 for a while now and again no problems. maybe the EX23 for XC use? they have those in 26" black.
pick your spokes..
i normally chose sapin black (because black)
select your nipples..
alloy nipples (again because black)

comes to 154.99

edit - shame they dont have a sale on, got my front and rear for £30 more.

I'm waiting on a set of Shimano 29" MT35 wheels coming for my son's build. Hopefully they should start him off. He had a budget, which I have clearly gone over, totally my fault, so didn't want to spend too much on wheels. Anyone used them?

Also, what brakes would you recommend? He's got XT spec gearset, so was looking at the same spec brakes, thoughts?

The only thing with shimano wheels, is that they don't use sealed bearings, so you need to keep an eye on 1. that the cones stay tight 2. that you service the bearings and 3. dont jet wash the hubs if you can help it

the SLX or XT brakes are very cheap (comparatively) and are almost identical to each other and work very well

merlin have the slx front and rears for £110 or £170 for xt (not sure if thats cheapest - try CRC / Merlin / bikediscount.de usually for shimano)
you need disc rotors and adapters as well if you need them
